This week was a self-declared “comfort food” week.
Last night, we enjoyed yellow squash casserole, slow cooked pulled roast beef with homemade gravy and cheese sauce along with some mashed potatoes and parsnips.
My husband complimented my cooking as only he can by informing me, “You know, if I was on death row… you know how they get a meal?”
Me, knowing where he was going with this and feeling quite touched by the thought, “You’d be happy for that to be your last meal?”
Brian, “Yes. Very happy.”
Boy, that goes a lot further than just a plain ‘ol, “Dinner was nice,” doesn’t it?
It could have been the slow cooked hard apple cider talking, but – nah – I think he meant it. *wink*
Brian, please don’t do anything to get on death row. You are still getting a great meal!

I’ve learned to cook up some flour/butter in a sauce pan. About equal amounts of each and the quantity depends on how much sauce you want. (Perhaps 2T. ea. per cup of liquids.) I whisk in milk. Then, once it’s hot, throw in a ton of cheese and let it melt and thicken. That’s about it!
